Green Almonds
Fresh green almonds are the whole fruit picked in spring before the shell hardens: a fuzzy green hull around a soft, jelly-like white kernel, with a crisp, tart, grassy bite. Armenian, Persian and Middle Eastern kitchens eat them with salt, and chefs pickle them or shave them over spring plates. The season runs about eight weeks from April into May, and we bring them in from California growers while it lasts. Packed in 10 lb boxes.
