Varieties and when they run
| Variety | What to expect | Season |
|---|---|---|
| Fuyu | Non-astringent. Squat, tomato-shaped. Eaten crisp like an apple; the retail and foodservice workhorse. | October to December |
| Hachiya | Astringent. Acorn-shaped. Sold firm, eaten fully soft or dried as hoshigaki. | October to December |
Buying notes
Fuyus ship firm and sell on crunch; keep them cold and they hold for weeks. Hachiyas must soften completely before they are sweet, so merchandise them with a note or sell them to kitchens that bake and dry.
