American slicing cucumbers: the 36-count box that runs the salad bar

The dark-skinned standard slicer for delis, salad bars and prep kitchens. What Super Select, Select, Large and Plain mean, how the USDA grades line up, where the fruit comes from through the year, and the storage numbers that prevent pitting.

The American slicing cucumber is the long, dark green cucumber that most of the country pictures when it hears the word. It is the standard for salad bars, delis and prep kitchens because it is big, consistent and cheap per slice. King Quality Produce carries it year-round in a 36-count, 45 lb box, graded Super Select, Select, Large and Plain. Here is what buyers should know.

What it is and how the trade grades it

A slicer is harvested slightly immature, near full size but before the seeds enlarge and harden, about 55 to 60 days after flowering depending on cultivar and temperature2. The UC Davis Postharvest Technology Center says quality rests mainly on uniform shape, firmness and dark green skin color, with size, freedom from defects and absence of yellowing also counting2. The skin is thicker than a Persian's, and packers may apply an approved wax or oil to reduce water loss and abrasion and improve appearance2.

The grade names on our box are trade names rather than USDA grades. UC Davis lists the industry packing conventions for slicers as SuperSelect, Select, Small Super, Small, Large and Plain, and notes that they have no enforceable contractual value, unlike the USDA grades2. At KQP, Super Select is the top of the box: straight, dark, uniform fruit sized for consistent slices. Select is the standard grade for most salad bar and deli accounts. Large is bigger-diameter fruit for kitchens that want fewer cuts per pound. Plain is sound fruit with cosmetic variation in shape or color, priced for processing, juicing and chopped work. Our pack is a 36-count box weighing 45 lb, which works out to about 1.25 lb per cucumber.

Where it grows and when

The slicer is the cucumber the United States used to grow for itself and now largely imports. USDA's Economic Research Service reported that imports supplied about 35 percent of U.S. fresh cucumber availability in 1990 to 1994, 80 percent in 2015 to 2020 and almost 90 percent by 2020, with nearly 2.2 billion pounds imported that year, largely from Mexico and Canada4. A University of Florida analysis puts the domestic side of the story in numbers: U.S. fresh cucumber production fell from 1,087 million pounds in 2000 to 314 million pounds in 2020, a 71 percent drop, while imports from Mexico rose from 689 million to 1,740 million pounds6. About 85 percent of Mexican shipments between 2015 and 2020 arrived October through May6.

Domestic acreage is still meaningful. Penn State Extension, citing the 2022 Census of Agriculture, lists 105,647 harvested acres nationally, with Michigan at 29,558 acres growing mainly for pickling and Florida at 21,243 acres as the major fresh-market producer, and California at 7,254 acres5. Per capita availability of fresh cucumbers was about 11 pounds in 20225. For KQP, this means slicers from Mexico through the cool months and California fruit as the season warms.

How to buy: USDA grades and what to check

The USDA standard for cucumbers, effective September 2016, is the reference behind the trade terms3. U.S. Fancy fruit is well colored, well formed and not overgrown, with a diameter of not more than 2-3/8 inches and a length of at least 6 inches3. U.S. No. 1 is fairly well colored and fairly well formed within the same size limits, U.S. No. 1 Large has a minimum diameter of 2-1/4 inches with no maximum, and U.S. No. 2 is moderately colored, not badly deformed and at least 5 inches long3. Well colored means at least three-fourths of the surface is medium green or darker, and well formed means practically straight with no more than moderate tapering3. A KQP Super Select sits at the Fancy end of that range; Large tracks No. 1 Large; Plain is the fruit that is sound but would not make No. 1 on color or shape.

On receiving, fruit should be firm end to end, dark green without yellowing at the blossom end, and free of bruises and compression marks, which UC Davis calls very common when handling is careless2. Check for pulled ends, the torn stem scar that graders count as a handling defect2. Pitting or water-soaked patches mean the load ran too cold2.

Storage and shelf life

Slicers want a warmer room than most produce. UC Davis recommends 50 to 55 F (10 to 12.5 C) at 95 percent relative humidity, with a storage life generally less than 14 days because visual and sensory quality decline quickly beyond that2. Below 50 F, chilling injury begins after a day to three days, depending on temperature and cultivar, and shows up as water-soaked areas, pitting and accelerated decay2. Transit at 45 F is common in the trade but causes chilling injury after two to three days, and the damage is cumulative2.

Ethylene is the other hazard. Cucumbers are highly sensitive, and 1 to 5 ppm during distribution or short-term storage accelerates yellowing and decay, so UC Davis says not to store or ship them with bananas, melons or tomatoes2. If your walk-in holds at 36 to 38 F, keep slicers on the warmest shelf, leave them in the box, and turn them inside a week.

Nutrition

USDA's FoodData Central entry for cucumber with peel, raw, lists 15 calories per 100 grams, with 95.23 grams of water, 3.63 grams of carbohydrate, 0.5 grams of fiber, 1.67 grams of sugars and 0.65 grams of protein1. Minerals include 147 mg of potassium, 16 mg of calcium, 13 mg of magnesium, 24 mg of phosphorus and 2 mg of sodium; vitamins include 16.4 micrograms of vitamin K, 2.8 mg of vitamin C, 7 micrograms of folate and 45 micrograms of beta-carotene1. Those figures include the peel.

Two numbers stand out. The vitamin K, at 16.4 micrograms per 100 grams, is about 14 percent of the 120 microgram Daily Value; the National Institutes of Health describes vitamin K as a coenzyme for proteins involved in blood clotting and bone metabolism1, 7. The potassium, 147 mg per 100 grams, is a modest contribution toward an adequate intake that NIH sets at 3,400 mg a day for adult men and 2,600 mg for women, against a Daily Value of 4,700 mg1, 8. NIH notes that Americans generally consume less potassium than recommended and that it supports nerve transmission, muscle contraction and fluid balance8.

In the kitchen

The slicer is the workhorse of volume feeding in Los Angeles. Salad bars and cafeterias slice it on a mandoline into rounds that hold up under a sneeze guard. Delis and sandwich shops cut it lengthwise for spears and half-moons. Greek and Mediterranean kitchens peel and seed it for tzatziki and village salad. Fruit carts and loncheras sell pepinos con chile y limon from Large fruit cut into spears.

The grade you buy should follow the cut. Super Select for anything plated whole or in uniform rounds. Select for the salad bar and sandwich line. Large when the spec calls for a thick spear or a wide round. Plain when the fruit is going into the blender or the dice and nobody will see the skin.
